Roasted root vegetables are so easy to make! They really should be a staple side in my home! I made this turnip, rutabaga and carrot mix the other night and they were a huge hit.
1 large bag of baby carrots
Peel and cut up rutabagas and turnips. Lay them out on a baking sheet lined with foil along with the carrots. Drizzle with olive oil, sprinkle with salt and pepper and toss to coat. Bake in a 350 degree oven for 30 minutes.
